Job Title : Sous Chef
Department : F&B
Report To : Executive Chef
Salary Range : $2200 – $2500
Work Week : 6 days
Specialise : 70% Local & Oriental and Asian Food , 30% Western Cuisine
Overall Job Responsibility
Overall responsible for all aspects of kitchen operations, productions, quality, consistency and to provide courteous and efficient service to members/guests at all designated F&B outlets. Apart from ensuring the smooth running of the kitchen, must be able to take charge in the absence of the Executive Chef.
Main Duties
• Report to the Executive Chef and confers with him on the present and proposed practices and procedures.
• Work closely with the Executive Chef and takes over his duties in his absence.
• Direct and coordinate all food preparations and functions carried out in the respective kitchen.
• Administer the day-to-day kitchen operation of certain kitchen sections.
• Supervise the daily mis-en-place preparation to avoid overproduction.
• Supervise and ensures consistency in food preparation, quality and quantity.
• Inspect cold rooms daily and ensure that food is stored properly and prevent spoilage.
• Ensure the dishwasher keeps a high standard of hygiene.
• Conduct regular sanitation inspections in order to keep the kitchen in a very hygienic condition and to be aware of the hygiene requirements.
• Coordinate with the Chef for all purchases pertaining to the daily kitchen market list.
• Receive daily suppliers’ delivery and ensure ordered items are of the correct quality and quantity.
• Be well versed with existing local laws such as NEA, FSB, etc.
• Control food cost to avoid overproduction and spoilage.

Job Title : Senior Building Engineer
Department : Properties
Report To : Senior Manager, Properties
Salary Range : $3000 to $4000
Work Week : 5 days
Work Hour : 8.45am to 6.20pm
Pre-requisite : Fire Safety Manager Certificate, Minimum in Building Service or equivalent.
Experience : 3 years
Main Duties
• Lead and supervise an Assistant Building Engineer and a team of senior technician/technicians to ensure that its M&E maintenance section is running smoothly to provide technical support on daily operations of the 3 complexes in accordance with the required standards of the Club.
• Conduct daily inspections, give recommendations and training to maintenance team to maintain and carry out preventive maintenance for M&E installations, sanitary and plumbing services, telephone systems, PA systems, IU car park systems, NETs system, air-conditioning systems, pools/filtration/steamer/jacuzzi systems, audio/video equipment, CCTV security/sprinkler system/fire fighting equipment are maintained efficiently at all times.
• Oversee performance of works carried out by term contractors, renovation and project contractors are complied with the job specifications and requirements by the Club.
• Ensure that the Club premises and building facilities are properly maintained, structurally sound and in terms of general repairs and safety of systems/services to meet the statutory requirements.
• Responsible for repairs and maintenance of mechanical and electrical works and installations of the Club, including electrical, mechanical, plumbing, sanitary, pumps, piping, utilities and air-conditioning systems are carried out properly and swiftly upon breakdown.
• Monitor and analyse monthly usage of the utilities and give recommendation to reduce energy consumption to save operation costs.
• Source and purchase spares for replacing and servicing of M&E installations, Plumbing & Sanitary, building facilities and services.
• Plan and recommend annual operating and maintenance budgets for your M&E section, including revenue for car park operations.
• Act as a fire safety manager for the Club and conduct annual fire drills, safety committee meetings and related fire safety issues in compliance to FSB requirements.
• Develop and implement a set of Standard Operating Procedures (SOP) for your own section as directed by the Head of Department.

Main Duties
• Assist in the enforcement of rules and regulations in accordance to the Pools Bye-laws governing the conduct of persons in the swimming pools and surrounding.
• To maintain vigilance and alertness during the tour of duty and help prevent any accidents.
• To rescue person(s) who has/have difficulties in the pool and to apply resuscitation and/or administer first aid when necessary.
• To call for the ambulance if need arises.
• To maintain order and to take preventive measures against any likely trouble in the pool.
• To carry out maintenance and cleaning of the pools, jacuzzis, surrounding and gutters.
• To assist when required by the Senior Facilities Executive in making minor adjustments to the filtration and/or chemical feeding system.
• To carry out maintenance and dosage of chlorine to the Filtration Plant System.
